To add the finishing touch to this festive menu, Frédéric Bozzo suggests this fruity dessert. Easy to prepare, the pear is a delicate, aromatic fruit that will add a light, refreshing touch to your Christmas meal.

INGREDIENTS Serves 4
- 4 Comice pears
- 200g sugar
- 1 vanilla pod
- 1 75 cl bottle Loupiac
- 2 oranges
- 1 lemon
- 1 sprig of fresh mint
Preparing the pears
Peel the pears, transfer to a pan and cover with the wine. Add the sugar and vanilla pod, and cook over a gentle flame.
Meanwhile, zest the lemon and oranges. Keeping the zest separate, add to hot water, boil briefly then set aside and allow to cool. Finally add the zest to the pears and syrup.
Carefully monitor the pears using a cocktail stick. The flesh should be slightly firm.
Set aside overnight in a cool place.
To serve
Remove the pears from the syrup and place one in a deep dish. Remove some of the zest to decorate the base of the dish and the pear. Add a small amount of syrup and place a sprig of fresh mint next to the stem.
