Ingredients (Serves 4)

400g ripe strawberries

2 burrata cheeses

A few sprigs of fresh mint

1 tbsp honey (flower honey is ideal)

1 tbsp mild olive oil

Zest of half a lemon

Fleur de sel (sea salt flakes)

Freshly ground black pepper
Preparation
1. Prepare the strawberries Wash and hull the strawberries, then cut them into halves or quarters depending on their size.
2. Season gently In a mixing bowl, toss the strawberries with the honey, olive oil, and lemon zest. Let them sit for 10 minutes to allow the flavors to meld.
3.Plate with elegance Arrange the strawberries in a shallow bowl or on a serving platter. Place the burrata in the center, gently tearing it open.
4. The finishing touch Scatter with thinly sliced (chiffonade) mint leaves. Finish with a pinch of fleur de sel and a crack of black pepper.

Food & White Wine Pairing Recipe
Ingredients (Serves 4)

400g ultra-fresh sea bass fillet (sashimi grade)

2 limes

100ml coconut milk

1 small red onion
-
1 small handful of fresh cilantro (coriander)

1 tbsp olive oil

Fleur de sel (sea salt flakes)
Preparation
1. Prepare the fish Cut the sea bass into small, even cubes (about 1 cm). Keep chilled in the refrigerator.
2. Prepare the marinade Juice the limes. Very thinly slice the red onion. Finely chop the cilantro.
3. Assemble In a bowl, whisk together the lime juice, coconut milk, and olive oil. Add the onion, cilantro, and finely chopped chili (if using).
4. “Cold cook” Pour the marinade over the fish. Mix gently and let marinate in the fridge for 10 to 15 minutes maximum.
5. Serve Serve thoroughly chilled, adding a pinch of fleur de sel at the very last moment.
